holy shiitake

In one of the classrooms where I teach there are three sections of tree trunks leaning against the wall. Growing on these trees are several mushrooms. At first I thought they might be some sort of “experience nature” thing for the children. However, the grandfather man who comes in to mist them several times a day has assured me this is not so. He’s raising Shiitake Mushrooms.

Yesterday, he gave me a bag from his recent picking. I brought them home where my Japanese roommate was delighted by their extraordinary size. She showed me how to grill them and dip them in soy sauce for a lovely appetizer. I’ve never been much of a fan of mushrooms, but I have to say, the right-off-the-tree variety is delicious.
