wading through piles of squash
This is a dinner I made with ingredients readily available in my house. That is, I had lots of squash and cabbage to use up.
On the right are butternut squash croquettes (or korokke in Japanese), breaded and deep-fried squash. I should have combined the mashed squash with mashed potatoes to provide a little more rigidity, but the creaminess of the roasted squash would not have come through so well.
On the left is a red cabbage and carrot salad with a rice vinegar dressing. Cabbage is always a great side to croquettes, and the colors here make me happy.
